Raw Wild blueberry Cheesecake (No Bake)
Wild blueberries help restore the central nervous system and flush viral neurotoxins out of the liver. They contain exceptionally powerful antioxidants that help repair your thyroid’s tissue and reduce the growth of nodules, too.
Base Ingredients
1/3 cup cashews
1/2 +1/3 cup coconut flakes
3 cups of dates
1 teaspoon cinnamon (optional)
Wild Blueberry Filling
4 cups of wild blueberries (Save 1 cup to garnish the cheesecake when finished)
1 cup of thawed frozen mango or fresh mango
1 cup pitted dates
Directions
Blend base ingredients process the medjool dates, shredded coconut and cinnamon (if using) in a food processor until thoroughly combined and smooth. Using wet hands, place the mixture in a 9” pie dish and press evenly on the bottom and up. Place in the fridge until needed.
For the filling blend until smooth. Pour the mixture into the pie crust and top with remaining whole wild blueberries. Set in the freezer for 2-3 hours or overnight and allow if frozen over night slightly thaw before serving. Enjoy!
