Ingredients
3/4 cups dried elderberries
3 cups water
3/4 cups raw honey
Optional:
1 cinnamon stick
1 star anise
1/4 tsp whole cloves
Directions
Add your 3/4 cups of dried elderberries to a pan with 3 cups of water
Optional add in cinnamon stick, star anise and whole cloves
Bring to a simmer for at least 45 minutes until reduced by half
Strain into a fine mesh sieve into a jug, using a wooden spoon press down on the elderberries to remove all the juices.
Allow to cool completely before adding in 3/4 cups of raw honey.
Give a good whisk and you have made elderberry syrup. Pour into a glass jar.
I love to add elderberry syrup to a glass dropper bottle as this is the easiest way to get into my son Rían. This stores in the fridge for up to 2 months and is really delicious so usually won’t last that long.
