Healthy Homemade Rice Crispy Bars

Organic rice pops 150 grams

1/2 cup runny honey

2-3 tablespoons light tahini

Method

Preheat oven to 200 C. Toast organic rice pops on a tray for 15 minutes until toasted. Mix through the 1/2 cup of runny honey and then mix in 2-3 tablespoons of light tahini until fully incorporated.

Line a pie dish with parchment paper and add in your crispy rice mix evenly and flatten with a spoon. Store in the freezer for a few hours or overnight to set and then can cut into bars. It’s best kept in the freezer until ready to serve as it can come away when it stays at room temperature. My son loves this as a rice crispy bar or when it separates as a bowl or rice crispy pops on a spoon.
