Banana Berry Bread

This is a healing gluten free/dairy free bread amended recipe from Medical Medium that I love and Rían loves.

I hope you enjoy filling your home with the aromas of this delicious healing recipe that’s super indulgent. Great for adults and children and sharing with loved ones.

Ingredients:

  • 3 bananas mashed
  • ⅓ cup pure maple syrup
  • 1 tsp cinnamon powder
  • ½ cup coconut milk
  • 2 cups gluten-free oat flour
  • ½ cup millet flour
  • 1 tsp aluminum-free baking powder
  • ¼ tsp baking soda
  • 1 cup fresh or thawed frozen mixed berries, such as blackberries, raspberries, wild blueberries, and chopped strawberries.

Directions:

Preheat the oven to 180°C/350°F.

Line a 9-×-5-inch loaf pan with parchment paper.

Place the bananas in a bowl and mash with a fork or potato masher. Add the maple syrup, cinnamon, and almond or coconut milk. Mix well.

Combine the gluten-free oat flour, millet flour, baking powder, and baking soda in a second bowl. Whisk until lump-free. Add the wet ingredients and gently fold until you get a smooth combined batter.

Add the berries and stir very gently, just enough to incorporate them.

Pour the batter into the loaf pan and bake for 50 to 60 minutes until a toothpick inserted in the centre comes out clean.

Remove from the oven and cool completely before slicing so it cuts into nice slices.

Tips:

  • If you select fresh strawberries for this recipe, remove the greens before using.
  • If you have a high speed good quality blender you can make your own oat flour from gluten free oats and millet flour from millet. This is what I do in my Vitamix as I find it much easier and more economical.
