Banana and Wild Blueberry Muffins

Here’s a healthy muffin recipe for your tea break — and it’s a big hit with my son! They remind me of bananas bread and they are best served cooled from the oven so they set well.

Banana & Wild Blueberry Muffins
Ingredients:

  • 6 bananas
  • 2 ½ cups oat flour
  • 2/4 cup chia seeds
  • 2/3 cup maple syrup
  • 1 tsp baking soda
  • Juice of 1 lemon
  • ¼ tsp sea salt
  • 1 cup frozen wild blueberries

Method:

  1. Preheat oven to 200°C and line a muffin tray with parchment paper liners.
  2. Blend chia seeds in a high-speed blender until flour-like.
  3. Add the remaining ingredients (except the blueberries) and blend until smooth.
  4. Gently fold in the frozen wild blueberries.
  5. Spoon mixture into the prepared muffin tray and bake for 22-25 minutes, until golden brown.
  6. Allow to cool before serving.

 These muffins freeze beautifully — perfect for stocking up!
